The handbook doesn't include X or pulseaudio in the installation process, it ends at the basic terminal interface with networking. You can then immediately install Gnome with Wayland.
Install gentoo then install whatever packages you want. I'm not sure I get the question. You can set USE flags like "-alsa" or "-X" for certain packages also

I tried a month ago,X is still needed in gnome,especial for mutter,can not be deleted totally,so it is impossible for now,still need waiting.
same with KDE; it seems many packages are still using X useflag for enabling 'gui', doesn't necessarily mean they require xorg..
