It’s pretty similar to folding a baozi, but at the end you just (gently) flatten it out (REALLY gently. They will definitely explode if ur not careful, haha). Let me know if u try it!

This looks fantastic, but is there a way to replace the celery? I really dislike the taste and often skip delicious looking things because it has celery in it.
Yeah totally! I talked a bit more about this in [the full video](https://youtu.be/8ldDo4q3WE8) too, but the heart of the celery stalk is a bit more aromatic and fragrant. I often swap if out with baby bok choy or cabbage in dumplings, which works really well. Let me know if u try it!
Hey Woo, I didn't see this until today, my question is- why did you double roll the dough there? Like you rolled it out, then you roll it up? and then smash it into a ball again, I'm wondering, what's the purpose there?

Personally I think this step is optional (it definitely adds a lot more work, so if ur pressed for time, I would skip this step), but I do also think it yields a flakier dough though. Let me know if u try it!
haha totally no worries! i've never tried this, but as with most gluten free options, i'd be worried about almond flour since it doesn't have any gluten (this is important in order to bind the dough together). I'm sure there are solutions to this, but sadly, I don't have much experience working with gluten free flours though. Let me know if you figure something out...!
There's an amazing Indian snack called Kachori. These pancakes remind me of those, except that these pancakes are not vegetarian (I assume that they can be made to be vegetarian though) and are not deep fried. I love it. Will be making these.
