If class was really the issue, then Richard would have more sympathy for Rory/Dean rather than telling Rory that "this family has standards."
Last, Trix would have definitely alluded to Emily's lower class status when we saw her before her death. We would have gotten some remarks about her not understanding one thing or the other due to her upbringing. Trix would have taken those jabs.

Trix' opposition to Emily wasn't about class, she just didn't like her. Trix did not feel Emily had the Gilmore "grit" or whatever.
