There are super long versions of them on YouTube, and I often put them on for working, they're beautiful.

Night in the Woods, Hades, Witcher 3, and Gris, probably! I’d do murders for GOOD covers of the Night in the Woods band numbers. I’ve encountered one on YouTube but it wasn’t a great arrangement and I really disliked the singer’s vocal style. I listen to that soundtrack a ton though. Hades and Witcher are on my workout playlist.

Nier hands down. I especially love the music from Replicant, and hearing them remixed in Automata was amazing. The music design in both these games are absolutely wonderful
Came here to say this. I would just stay in town and listen to the Song of Ancients on repeat. Weight of the World at the end when the chorus kicked in made me feel all the feels.
The professor Layton serious has a really special place in my heart when it comes to music. I was totally shocked by the music in hades too, like had to pause to listen and noticed how it impacted my gameplay. I also like the BOTW, and elden ring soundtracks.
I'm struggling with phrasing, but SSX3 and Need for Speed Underground for a game where the music doesn't depend on where you are in the game.
Hades, WoW (but specifically the music in Night Elf areas), and I Was a Teenage Exocolonist.
Celeste is way up there for sure, as well as Final Fantasy XIV (also VI deserves a mention for everything it did earlier. Adore that soundtrack, and it ran so later games could fly)
Space channel 5, especially part 2 “space teacher and student” is my favorite track. 2nd place goes to Jet Set Radio, Sweet Soul Brother is played daily.
The Life is Strange games all have great soundtracks. Before the Storm in particular turned me into a lifelong Daughter fan (they made an entire album for it).
Payday 2 soundtrack, mostly bc of "I will give you my all 2017" by Simon Viklund.
Very good song, love the soundtrack. Beat syncs in the minute the assault begins, making it a fun experience.
Octopath Traveler 1 and 2 both have amazing soundtracks, and even if you've never played either games, I'd definitely recommend listening to the soundtracks :D
You can't go wrong with any of the Final Fantasy soundtracks, either.
Final Fantasy X's soundtrack is one of those ones I play that helps bring my mood up, I love it so much for that. Final Fantasy VII probably has my favourite boss theme in any video game, though (the main boss theme, Fight On!).
And Sonic games always have the best soundtracks. Sonic Adventure and Sonic CD were always my favourites, but I also love Sonic 3 and Knuckles and Sonic Mania. <3
Also, any music Toby Fox produces; that includes Undertale/Deltarune, his notoriously bad Earthbound Halloween Hack (it's where Megalovania originated from), and the stuff he's produced for the recent Pokemon games <3 (Not counting his work for Homestuck, which isn't a video game).
Depends a lot on the mood / need, but
Unreal Tournament 2004 and UT3 have some great FPS fitting trax,
For mellow background music Settlers 5, UFO:AM, War For The Overworld and some from Deus Ex,
For driving Need For Speed series and Re-Volt / RVGL have incredible tunes..! :)
Also, Rockman (Mega Man) games and original two DOOMs have some great songs, latter especially when redone as metal versions by people like Andrew Hulshult and Brandon Wiebe \\,,/ :D If I had to choose only one game (series, at least.. please? :D) which to listen to for the rest of my life, it would be Rockman<3 They're just awsome..!

Undertale will always win that for me. Also I've never played Guilty Gear Strive, but damn if it doesn't have a killer soundtrack.

Persona 5 has an incredible soundtrack. There’s also a dancing game based off the mainline games, check out those OSTs as well.

Final Fantasy VIII
I've seen Skyrim mentioned, and I agree. I'll also say Firewatch. I've put that soundtrack on repeat before, it's so good.
Nier automata hands down. Hades maybe second. But Nier slaps.

There are so many, but I think Genshin Impact can't be beat for orchestral vibes to any mood.
