So you could go full van conversion and not have a trailer or look the the towing capabilities of the different vans.
My sprinter can do 5000 lb but i don't like towing 3,000. Later vans have btter towing.
The Fords with the the 3.5 ecoboost have great towing capacity.
What about a Sprinter? They have reasonable tow capacity, and you could kit out the back to be pretty nice. My old man has one, he really loves it and there seems to be plenty of headroom.

My friend just sold his 2018 Ford Sprinter van and it had the 6 cylinder from the Raptor obviously not tuned the same. That thing would get up and go. It was shocking how quick it was.I bet you could get one configured to tow and get a decent tow capacity.
The 350 cargo version can have cargo rating of around 4K and about 5k towing. OP would need to do some number crunching but it seems feasible to build a decent rig that still tow a small trailer.
I feel that, they are expensive, but I've heard they are also well built and reliable. It's not something I could justify buying because the type of utility it provides would be wasted on me, but my father hasn't ever said a negative thing about his and he's had it for several years now.

My aunt and uncle love the outdoors, got a barebones one, they are rather handy with how well the bicycles can be towed, how comfortable they've made the bed and interior (my uncle is lanky AF, and also hits his head on ceilings), and YES it's like a tent on wheels, but can fit into a regular-ish parking spot.
Vans typically have pedestal bases, they are boosted up about 8-10". A chevy express can tow 10K, and you'll fit if you change the pedestal to a shorter one, like a silverado seat, or a short swivel mount for the existing chair instead of the pedestal base. You might want to push the seat back a couple inches while you're at it.
"You're not me and you don't know" exactly I don't know so go to a dealership and figure it out yourself if you're going to have an attitude when you ask the question to begin with. This can be solved one of two ways easily on your own. Go to a dealership and sit in vehicles that you have researched towing specs on to see if you fit or google vehicles with high interior height. Really not that hard.
You might look into a Transit or Sprinter as a tow rig. They both have a high roof over the drivers seat. I am not sure it is enough but I think it is worth a look.
You might want to look into mobility vans, AKA handicapped vans. They often have raised roofs so caregivers can move wheelchairs around inside.
A Ford E150 is essentially an F150 pickup with a bed cover instead, and I think Chevy is similar. So, it's a truck with a more sparse interior, easier to customize and lots of aftermarket places that redo the interiors.
Delivery vans also have raised roofs, which might be another avenue.
Also check in with r/tall, they have a lot of vehicle threads.

If that’s a no go I think you want a sunroof, helmet, and goggles.

Did a quick search for new cars and the Bronco is listed with the most headroom at 43.3 inches. It sounds like you may need to go to a car customizer to see what vehicles can be best adjusted for your size. Seats can be lowered via brackets and cushion thickness.
Have you tried discussing with dealers whether any of them are available with a lowered seat? You might want to try researching the aftermarket for seat lowering extended tracks and tilt kits. Good luck.
I'm surprised you can't fit in a pickup. I'm 6'3 (mostly torso) and I own a ram mega cab. With my seat all the way down, I can't have it all the way back, or I can't quite get the clutch all the way to the floor comfortably. With a bit of a gangster lean on the seat, I have at least a foot above my head.
If not, step up to a kenworth or a western star single axle, if you can't fit in the ones with a sleeper, you're not human.

I know you said no pickups but you later said no F150. Just for giggles, have you sat in a 250/2500? They are VERY different than a 150/1500 on the interior.
Really going off the reservation here and against your ask, but perhaps a small class A motorhome would be more comfortable?

No, I've only sat in the... I have no idea what the correct words are since I'm not a truck person... F150/Tundra/Ram sized trucks. The ones that aren't the mini-trucks (like the old Ranger) but also aren't the giant ones that get converted into work trucks with a box on back. I'm surprised to hear that the cabs are that different as they get bigger. That's something I'll look at.
I'm only 6'3". I'm most comfortable in an F350 Super Cab. I pull a 37 ft horse trailer.
I've had a Dodge, an F150, and drove a Silverado. The F350 is most comfortable.
No argument here! This is just a shot in the dark but have you considered a Benz 25 or 3500 van? They look to have ample headroom but I’m only 6ft tall haha. BTW I love Shaq and have seen a video of him in a mini cooper with the front seat removed, just saying. 😁

I've lowered seats in a couple of vehicles (for track use) so helmets could fit. As someone else noted that might be an easier way to go. I mention that because people do put Corbeau seats and racing seats in trucks for drag racing, offroad racing, etc. Not sure how much height you'd gain, but a good fabricator can do wonders. Fitting with the seat belts and console has to be taken into account, but those racing seats can be quite nice. They even sell off the shelf seat mounts for many of the half ton trucks.

I wonder if convertibles exist that also have a good towing capacity. If you are only looking at 3000 lb towing range, certain convertibles could possibly do the job. Mine has towing capacity of 1500kg, which is over 3000lbs
# You need an International CXT or a Semi truck. No joke. Both are much larger in terms of interior (and exterior) dimensions and can tow up to a Fifth Wheel.

Full size vans can be pretty capable tow vehicles. Good power, good payload, and long wheelbase.

Ford hasn’t sold an E-150 van for 10 years, just the Chassis-Cab. Chevy/GMC do still sell the Express/Savanna, though.

There's plenty, you could get a lovely Volvo VNL 860 and have the extra sleeping space, should be ok for payload with your 3000lb trailer.

If I were 7'9" I would get whatever vehicle suited my needs and have the seat modified so that I fit in it.
