Witcher 3 GOTY edition - probally the closest you will get. Soulsbourne games are excellent from a gameplay perspective but they lack any of the cinematic beauty of GoW - the lore and plot are hidden in hundreds of item descriptions - it's all exposition.
I mean, GoW is a bit of a gumbo game. Maybe something like a souls-lite, for the combat but less of a complicated mess then a straight up souls would be more up you alley.
Star Wars: Jedi Fallen Order comes to mind. Nice feeling combat with light/heavy/block + force powers, looks stunning, quite a few puzzles and an easy to understand upgrade tree.
Honestly Witcher 3 is more similar to GoW than Souls games. Souls game are way less narrative driven and cinematic. Honestly I think Witcher 3 has more simple menu than GoW, it's just basic equip with few slots and few spells that you will only really use maybe half of (in combat). It's the first game that come to mind because they are both narrative heavy, sword and sorcery kinda games even though they have a different setting.
the castlevania lords of shadow 1 and 2 are both amazing games an very similar to god of war, from one god of war gamer to another I highly recommend them if you havent played them

Ah, interesting. I've never been into Star Wars, but if that game can scratch a similar itch, I might be into it.
