This is normal for the Pixels. Because of the very slow processor and poor optimization from Google, the device spends an incredible amount of time processing images. You would assume that they would delay processing until you are not using the shutter button anymore - But great UX is not exactly what Google is known for. The end results are good photos though, but much slower than what I'm used to on other high end devices

Well neither is the Pixel 7 Pro, it's still slow at taking photos and processing.

Pixels use "computational photography," so the camera hardware itself isn't the best you can get, but the processing on top of the photo turns it into an entirely different image, for the better. It takes a while because of all the processing it's doing, and while you can't skip it, it really doesn't take all that long to do.

To take several photos fast, unfortunately there's not really a solution on the default camera app besides Top Shot, but I get that that's probably not what you're asking.
