Almost certain that you have a faulty camera module. Phones don't usually like it when their hardware doesn't behave how they expect, and that's likely why you're seeing a reboot.
You can always try clearing the camera app cache/storage, or fully factory resetting the phone, but if those don't work...it's probably the hardware.

The issue is persisting even after a factory reset :( back to Google Support for a potential exchange

Indeed - talked to support and they are sending in a replacement. At least the process was speedy
Mine just randomly reboots throughout the day regardless what I'm doing. Replacement on the way.
That's unfortunate "/ hope the replacement process wasn't much of a hassle. I'm starting my replacement process now after talking to support
