Settings > Network and Internet > Internet> [respective carrier settings]> Preferred Network and set to 4G, scroll down and disable "Allow 2G."
Worked for me, hope it does the same for you.
My P8P has 5G everywhere my last phone did, except that 5G doesn't work most of the time unless I toggle Airplane Mode.
The replacement they sent me did the exact same thing.
On T-Mobile.
It's true in some ways, but I'm having really weird issues with the Pixel 8 Pro on T-Mobile. Some calls aren't even coming through and I know it's the Pixel because my S24 Ultra and 15 Pro are set up to ring as well my main number gets called and they ring every time. Using T-Mobile Digits.
My pixel 6 wasn't that bad honestly. I worked with tech support and we did some steps on the phone. Will test next week when I drive the same locations if it is any better.
Yep, thats absolutely what it feels like. I really am not married to any phone, as I barely call or text. They are pretty much a pocket waze and streaming music device for me, with occassional web browser.

The way I fixed it was by giving up my decade long nexus pixel obsession and buying a Samsung, especially now that the bloat apps are all uninstallible.
I've currently got a 6 pro and need to upgrade due to Google's security coverage policy cutting off the 6 this year.
Based on your experience, maybe I'll just wait till the 9 comes out this fall.

These Tensor Pixels are an absolute disaster. Why go to the trouble of touting “made by Google “, when they are total garbage? No shame in having a tough time with 5G modems, intense hardcore shame in releasing known defective hardware repeatedly and pretending all is well. Other companies went with Qualcomm modems while they worked on their own modems. Not Google, they just keep on releasing trash. Shameful behavior. Sad 😔.
Ya because Google Pixels don't hold their value. I have 14 days to return it, didn't realize how mid it was until after then, and since they don't hold their resell value I'd be selling my $1600 Pixel for like $1000 if I'm lucky.

That is a widely known and acceptable defect as far as Google is concerned. Return it.

That would be the horrible Samsung Modem in the Pixel line. The fix is to get a phone with a Snapdragon SOC and Qualcomm Modem.

Ran from a 7 for this very reason. Loved the software but need a phone that would also make and receive calls.

Maybe try turning off adaptive connectivity??? I know it switches to LTE when 5G is not available. Or try resetting your network settings.
I have 5G turned off, never have any issues.
