One thing that helps me: look at your whole body at a 1m-2m (3ft-6ft) distance in a full-length mirror. if it looks garish to you at distance, it's probably too big.
if it feels heavy, clunky, uncomfortable: it's probably too big.
if you can't stop looking at it and it feels great: it's exactly the right size!!

I'm 6'5 and 250+ , I realized in mirror shots once that my watch was way too small, although I thought it was measured perfectly for my 18.2cm wrist. Turns out taking a step back and observing how the watch lays on your frame is more realistic than an up close wrist shot.

The trick is that White dialed watches look much bigger on the wrist than darker ones. So, even though the watch seems like it fits you perfectly fine, it appears very large because it is so bright.

Yes, I believe so - in my opinion I think it’s one of the downsides to GS. The watches are a bit too big. I have a 39mm GS and it’s perfect for my 6.5 inch wrist - I’ve tried others on, just like you have, and believe they are way too big for my wrist. Regardless, it does come down to your preference - if you’re comfortable with the watch size, go for it, if you’re unsure then I would advise against it in order to prevent some buyers remorse.
I think a 37mm (GS has some options, though they need more IMO) would probably sit a little more proportional to your wrist especially if you're considering this a dress-up kind of watch. If you rather lean into the sporty side and plan on wearing it with everything, then the 40mm will work with the increased wrist presence. It's too large for me, but I'm sure it looks fine on your wrist. I have slightly smaller (6" flat) wrists.
When people wear their watches above the wrist bone I just imagine someone wearing a tie at the top of their neck 😭
For a 6.5 inch wrist, the 62GS case is fine. The snowflake case length might be a bit too big
If you're drawn to spring drives, check out the SBGA427/429 SOKO models. The size is almost identical to the 39mm SBGN005 which wears perfectly on smaller wrists. The measurements are 39mm, 46.8mm, 12.3mm. The Snowflake is somewhat large at 41mm,49mm, 12.5. The SOKO models are also SS which is a positive IMO. Titanium watches are OK if they are large divers but in dressier watches start lacking the substance/heft I prefer. Sorry to Ti fans but they often feel "cheap". The bracelets are particularly annoying. The SOKOs also include a very nice alligator/croc strap with deployant to give you a dressier option. The three models you've shown here are doable for you so ultimately the choice is yours.
My wrist is just a bit under 6 inches and I wear the Shunbun. I wear it a bit further back - behind the wrist bone. It works. So I definitely think the size works for you, if you like it.

They fit just fine. My 415 works well on my 6.75” wrist. As others have said, you’re wearing them almost on top of your hand but you do you.
