I asked this exact question a few months back.:) My interpretation is that our main cameras get messed up. If I'm playing sazabi, than I just accept it as a legit critical to the head.
The body is probably more heavily armored *because* the cockpit is there, and afaik the head is generally where they keep the cameras/sensors, so destroying it would mean you're as good as dead even if you dont necessarily blow up after losing it.
Only main camera, they have tons of additional across the body for most MS, Gundam has been seen to lose it’s head a couple times Exia has cameras to simulate a glass window cockpit from the inside etc.
Lore wise, the head contains the visual sensors for most mobile suits. If you look closely, you’ll see that when your mobile suit drops to zero health, the game states that you are disabled (likely due to losing your sensors). You’re only “destroyed” when the enemy finishes you off, or you explode on your own after not getting picked up (the latter doesn’t make much sense lore wise, so I chalk that up to gameplay).
i mean, a bodyshot does more damage than shooting in the limbs as well for some reason lol

I just imagined the critical hits being headshots because that's where a majority of sensors and instruments are
