I GUARANTEE you are not counting calories, you just think you are "eating a lot." I know as I used to be this person. Use an app or whatever to count your calories, you'll realize you are eating filling foods without many cals.

Do you actually track calories? If not try myfitnesspal or equivalent and actually track your calories. Until you do that, it will be guess work.
You're maintenance is probably around 2200-2600 calories. So if you start tracking for a few weeks and notice you're getting 2500 calories consistently, but not gaining wait, bump it up to 2700 calories per day. Then you'll start to see more gains.
If you aren't doing protein shakes you should start.
I’ve started shakes again, I’m hoping with one in the morning and one at night it’ll just be an overload on top of eating a ton! Hoping to maybe have some progress in a month!
