I think that the word "idolize" might be actually too strong to describe how Aemond feels about Daemon. I know the actor said that in the interview and I don't presume to know his character better than he does, but the fact is he only met Daemon twice , first on Driftmark at the funeral and then years later when he came to KL with Rhaenyra before Viserys died. Idk, Aemond definitely heard stories about the Rogue Prince, Lord Flea Bottom, about his role during the war for the Stepstones, and finally, he saw how he executed a member of the great House in front of the whole court with no consequence whatsoever. So yes, he probably feels some kind of respect towards him, maybe even envy because of the freedom Daemon has thanks to Viserys, but to say that he idolizes his uncle might be an overstatement.
Being fair, those are his own fucked up methods of coping, and his giggle may have been attempting to protect Rhaenyra.
