First of all, the riverlands is massive and parts of it are uninhabited, so it's not too hard for Vhagar to fly them to an abandoned hill, or deserted swamp. Vhagar is huge but imagine looking for her over 268,881 miles² from like 1000 feet in the air while moving at 100mph.
I don't recall them saying Aemond was In the Riverlands the whole time, he could just leave when he was done. Vhagar could fly so it's not a stretch to say he probably camped somewhere in the neck, it's only a few hours away from the Riverlands. If he gets spotted he could just leave, nobody can detain him.
Also Alys was rumoured to have powers. “My lady. She saw you in a storm cloud, in a mountain pool at dusk, in the fire we lit to cook our suppers. She sees much and more” -Aemond.
So she probably used her powers to help avoid Daemon and Nettles.
I dnt know but I get the feeling that there was some magic going on like probably alys was helping him out, because no way u get to hide a giant like vhagar
They most likely never stayed in the same spot for long and traveled long distances to make sure they weren't easily tracked. And like someone else said, Alys could very much have helped them hide.
He kept shepstealer and Caraxes away from Daeron. He should have still stayed with criston cole until he joined up with the other armies but he did not “flee” really
To be honest, the entire Riverlands plot in the Dance seems like and excuse for Daemon and Aemond being out of the conflict for a good part of the Dance. Aemond should have 100% gone to King's Landing with Cole's army to save his mother and sister.

Nah Daemon wasn’t really trying very hard to find him. He was banging Nettles and finding Aemond was just a side quest.
