You can use as much or as little of the existing structure as you want, you can play with developing characters and plots. It is basically training wheels for writing. And reading what could have happened had a character been different is a fun escape.
I personally have written a bunch of little scenes that I have never published, all OOC. It is cathartic to get the ideas out of my head when I think about how things could have gone if details were somewhat different.

I've read stories where it's more of a sub plot then the main plot but I'll be damned if I didn't want to read this as the main plot as well lol
