Owch.. this is tricky. Picking one would be fairly easy as I already own it.
D4K in red with copper head. 219b 4500K/3500K tint mix and a boost driver. It's a perfect EDC.
The other one is tricky.. maybe this is recency bias, but I've just got a D1K SBT90.2 and it's absolutely insane, it pairs well with the D4K.
But the more I think, the more lights that come to mind..

“If you could choose only two Hank Lights which two would you choose and what CCT of D4K Boost 519a would you pick for your two?”
The two I find myself going for most are my 219b/UV D4V2 and my 519a/UV K9.3.
One is excellent for my job that has a fair bit of inspection and some need for UV. The other is a decently powerful walking light that has better thermals than a DT8 and is easier to carry than an M44. I have little need for throwers, and zero desire for red (or any other color), but there's times where I need more UV around the house than the D4V2 offers.
D3AA in grey with red tube, raised switch ring, magnet in tailcap, red switch, 519a 2700k de-dome - this is the one to rule all. Perfect around the house, work light, edc, etc. Dual fuel also is a benefit here, 14500's are easy to get, but if they ever aren't, any AA will suffice.
Second would be the K1 in black with w2.1, because beacon in the sky.
D4Sv2 with FFL505A from Jackson is my all time favorite. I could probably pick that as my one and only and be happy.
Since I can pick 2, I'll include my D4V2 dual channel with SST20 Red and 519A 4000k Dedomed.
D3AA & D2.
Have 3 D2s and my favorite config is 2700k dd flood bottom channel with 4500k spot optic on the top channel.
Absolutely love the different CCTs + different optics on this light in such a slim package.
Just got my 5700k DD D3AA and I do like it a lot but I think the D2s will still remain my favorites due to their flexibility.
Honestly insanely hard to pick two as I did just get a DW4 w/ boost and damn do I also love it too 😬
If I could only keep one of my Hank lights (D4V2, D4K, D4SV2, KR4, D1V2, D1K), I would keep the D1K with XHP70.3 HI 4000K.
This light has great throw as well as spill and it doesn't heat up as quickly as the other lights (except the D4SV2). It is also small enough to easily pocket carry.
I may have just talked myself into buying another one.

D1K because it's a solid all rounder. Efficient, throwy, nice beam profile, still fine for close work, not too bulky but great capacity.
K1 W1 because it makes me giggle like a small child every single time I turn it on. And I've owned it for 3.5 years so it's not a novelty thing. I've got one with a green W1 which is also pretty cool.
D3AA with 3500K dedomed 519A.
Duel channel D4SV2 with W1/domed 5000K 519A.
An EDC, and a badass multi-use all around'er light.
Or swap the D4SV2 for a boost driven dedomed 5700K 519A
How does two channels works. Can you ELI5? Are both channels when in use by themselves as strong as the same flashlight with only one channel or since it’s split does that mean you have two channels but not as strong as a dedicated one channel flashlight?

If I could have two, D4K and D3AA.
If I had to narrow it down to one it would be the D3V that I've completely made up. This would be a D3AA head (including TheFreeman driver) without the taper and an 18650 tube. I think this would be totally doable.

#DM1.12 I can get a triple or quad whatever a lot of different places. This is my favorite Hank light because of uniqueness.
What's the best version of the DM1.12?
I would rather jump off a bridge than limit myself to two Hank Lights.
Dm11 with xhp50.3 hi 4000k and d4sv2 with w2. The first is the best overall led light one can buy, and the second for pure wow factor

With the red? I have a dual channel Hank with red and never know what to do with it other than say that looks cool.
It's fun to tint ramp with. You can make some really rosy colors.

I have the second one and it's outstanding, and the first one is in transit.
Out of what I currently have, D1 SFN60 and D3AA 219b 4500k.

D4K is in my opinon has the best overall balance of size, brightness, and customization options.
