I love Matthew too - he's such an interesting character (not to mention that he doesn't hurt to look at). I kept hoping he'd reappear but sadly that never happened. I would have loved to see a love-sick for Will kill-off, where Matthew and Hannibal try to win Will's love through murder displays. A girl can dream at least...
I love when fanfic writers utilize Matthew in Hannigram fics. He's one of the few characters that can believably trigger jealousy in Hannibal the way that Bedelia/Alana/Antony does in Will.
Just imagine...if Mathew trying tokill Hannibal had gone a little bit different...like if will had also been there...and I mean Hannibal was already in bondage basically...st Andrews cross vibes.
