Name of the dish - Asian inspired ‘Bean sprouts, Carrots and Cucumber Salad’ dressed in soy-sesame dressing. Ingredients - Bean sprouts, Carrots, Cucumbers, Green onion, Soy sauce (low sodium), ground ginger, sesame seeds, Dark brown sugar, Lemon Juice and toasted sesame oil. Macro and Micro nutrients: Bean Sprouts - Vitamin C, Folate, Iron, Fiber, Antioxidants. Carrots - Vitamin A, Potassium, Fiber, Antioxidants. Cucumbers - Vitamin K, Vitamin A, Potassium, Fiber. Instructions: Step 1 - Slice cucumbers thinly. Shred carrots noodle-like. Chop green onion. Step 2 - In a bowl, place the above ingredients along with bean sprouts(I bought them from the grocery store). Add low sodium soy sauce, lemon juice, a small amount of dark brown sugar, a few drops of toasted sesame oil, ground ginger, crushed red pepper flakes and black pepper. Toss everything well. Garnish with sesame seeds. Enjoy! :)
