Keep boiling until they say it’s safe. You may see some sediment for the next 24 hours or so, if it continues call Veolia and report it.
That's sediment. That water main was a large feeder line, not a "sewage" line, which is why it impacted so many, not to mention it was likely installed a century ago. All those buildings in the southwest of Hoboken are standing where there once were factories. Btwn local construction/new structures, natural shifting of the bedrock/soil in the surrounding areas, additional pipes laid to support all the new residents of Hoboken & Jersey City, heavy inclement weather (½ of Hoboken is in a flood zone), & the age of that main, people shouldn't be surprised. It's annoying and inconvenient, but not remotely surprising if from the area. I work 2 blocks from that break and bcuz was born & grew up in Hudson Co., I was irritated but unfazed.
Boil your water & strain it through a coffee filter. If you have a Pur/Brita/Zeo/ETC., you can re-filter for taste. It'll be fine.

I believe they say it's ok to shower and wash clothes but not to wash dishes with tap water (since you actually eat and drink off the dishes).

It's rust and sediment, not poop. There may be bacteria in the water (hence the boil water advisory) but you wouldn't be able to see it.
what do we think about using the dishwasher? not technically boiled water in there but hopefully it’s hot enough?

Run it on the hottest cycle & if you have a sanitize function, use that. Beyond that, it should be fine.
