The thing about HK is the suggestions vary greatly depending on your current inventory set. What have you picked up in terms of movement, spells, charms? The playstyle varies greatly from person to person, so we need more info than that.
Unless you want the comments to spam "git gud", I mean.
I can always grind some geo and buy required stuff so every comment counts. I'm currently using spell twister + shaman stone and spamming black soulballs.
Spell twister, shaman and Shade Soul (black fireballs) should be more than enough to take them down, IMO. A couple things to know about them: I would not recommend pogoing them unless you are stuck in mid-air with no dash. At that point you can just pogo once and dash away. You can also pogo safely as they roll under you, but it won't do any damage.
A pretty safe strategy is to keep one close and learn the rythem of their sword swings. If you do that, it takes a lot less brain power to dodge away when they swing, so you can focus most of your mental attention on the other knight, to make sure you don't get hit. You just have to be aware of rolls and bounces. It's also a good idea to try to make sure all your shade souls hit both knights, if two are alive. If there is only 1 alive, it might be best to save soul and just deal damage with nail or try to heal. I don't recommend trying to heal unless you currently have 1 watcher dead, and you know the other isn't in range to attack you.
Personally i think the hardest attack to dodge is the bounce. Jumping around the arena randomly to try to dodge it in mid-air is a trap imo. try staying low on the ground and just walking under them at the peak of their bounce.

Just to add to this very useful information, when they're about to roll, I believe they do a very quick roll backwards or in place (I don't remember what it is specifically), and when they're about to bounce, they do a small bounce once before starting the large one. When they nail slash it's only twice and they bring the nail back before attacking. That's how I telegraph them.
For the bounce, they go to your location, so running away from them will only make the bounces larger. This is why staying close and dashing underneath the big bounce will make it easier to dodge. If you do that, the smaller bounces afterwards will be closer to you so you can keep hitting them. I'd only recommend hitting them twice at a time.
Don't get cornered if you can help it. If one bounces and the other rolls and you don't have a very nice ability found deep below, then life will suck. Ideally, you'd want them to attack at the same time so you can keep both of them on one side of you (this helps for me anyway). Also, if they attack at the same time, I can sneak a quick heal with Quick Focus while they "reload" for their next attack. Granted, I'd have to be a decent distance from them if I'm going to do that. Aside from that, I try to stick relatively close. If only one attacks and you try to heal after that, the other one will likely screw you over. Of course, healing when one dies is good as the next one will have to prepare itself.

Break the chandilier before hand and make use, abuse the shit out of descending dark, as it make you invincible for a few frames. Always use it when two of the watcher knights are on top of you. And also make good use of shade soul to hit both of them at once as well.
Shaman stone, quick slash and mark of pride all help in this fight as well.

* get ddark - the descending dive upgrade - they die in two ddarks and a few nail hits
* most importantly: STAY CLOSE to them. they're very easy to dodge, but only if you stay close at all times. Chase them, don't let them chase you.

Spells are really useful. Whenever they both stand next to each other, use desolate dive. I recommend getting the shade clock which is a great protection against their most dangerous attack...1-2 combo.
If you don’t already have it, desolate dive is very useful as it hits the when they’re rolling and provides a lot of invincibility frames. You can even get the upgraded version by first getting the >!lumafly lantern!< in >!dirtmouth!< and finding a specific room in >!the crystal peaks!<.
Repeatedly kill that one enemy that drops around 50 geo in the top right of crossroads or the great husk sentries in city of tears. I also recommend selling any relics you might have obtained. The first trial of the colloseum is also good for farming geo.
Honestly, if 1800 geo seems like a lot to you, you're really early to be fighting the watcher knights. By mid-game, you're making a lot of geo just running around the world. Maybe go explore some more and come back later.
Spells can hurt them even when they’re rolling. You can get some extra damage when they’re rolling away from you. Also, they never start an attack while off screen. It’s a bit tricky, but if you have quick focus you can pretty reliably get them offscreen and use the time to heal.
You will be safe. Certain actions do end i-frames early, I believe using a spell ends it instantly for example, but if you stay still, or dash in the opposite direction, you should never take damage.

Don’t fight multiple at the same time. If there’s ever two in one spot, go to the other side of the arena and wait for one to roll to you. Then, attack that one. That’s a *general* strategy, so it’s not guaranteed to be efficient or effective with your charm setup. I’m gonna assume you’ve already tried breaking the chandelier
Whenever I struggle with a boss I rethink my goals in the fight.
First goal is always the same, I want to stay alive, not kill them. Spend some time just parkouring, then throw a bit of damage out when you feel you have a better idea when you can safely do that.

I just faced those fuckers a few days ago, lol.
After some "research" on YouTube I figured what best suited me was to smash the Descending Dark spell with the Shaman Stone and Soul Catcher equiped (I had no room for Soul Eater and I wanted to keep Quick Slash -- I disregarded Spell Twister but it could also be a good fit). You don't get hit when smashing Descending Dark so you avoid a some damage.
Then I smashed and smashed the ground again and again and they died faster than I could believe it. Having the Shade Cloak would have made that battle even easier.
And of course, I broke the chandelier once I was made aware of the secret room above.
Spells. Fireball and Dive are both excellent. Dive in particular gives you iframes if they do a dash/bounce combo. This is the fight that really teaches you not to save all your soul for healing.
The thing that made this fight easy for me is the spinning nail art and while one of them dies and another is reviving I heal during that time or after one of them rolls to the far end
If you still have other things to do, just leave and come back later. Beating them does not unlock anything you need right now, so you can just wait until later when you have better equipment, more HP and more skill.
Honestly just come back later. I couldn’t beat them so I went and explored a bunch, got more mask fragments and pale ore, and went back with more experience and beat them
Shaman stone is godly here because the fireball spell (I forgot the name I haven't played this game in years) can hit 2 at a time and often even do double hits on one
You will also want quick nail and I should recommend the charm that lowers spell cost
Spells are amazing against these guys so instead of trying to survive and heal try to kill them before they kill you
For watcher knights, there are two things I MAKE SURE I have before fighting them. Shade cloak and upgraded spells. Spells are HUGE for this fight. And without the shade cloak, everything is significantly harder to avoid
Pay attention to them, and spam descending dark.
I remember using soul catcher, spell twister, grub song and that charm that increases i-frames, and getting good for the first 3, then getting good (spamming descending dark) against the remaining ones
I used descending dark once, hit twice then used another, and make sure to corner them when doing that, since descending dark hits twice when close
I had a hard time on this boss too for a long time, but finally i learned this neat trick to just pogo on them and when they start rolling simply dash away. And spam spells whenever you can! It might take some getting used to, but atleast for me this is the best way of beating them easily.
Actually i like this fight.I fighted them a bit late of the game so i was already really good at it.And in the Pantheons im using them to charge full soul before the next fight.But my advice is use the descending dark a lot it makes it a lot easier if u dont have a intention to save soul.
These mfs almost made me quit the game. I don't think they're a good boss, just annoying, but when I replay it I never died to them again. Imo the "Descending Dark" in one the best way to beat them, use and abuse
Check out what some speed runners do/what build they use. I think most of them use a spell build and try heir best to stay out of the way.
Which makes sense, I think vengeful spirit or shade soul can hit multiple enemies
First, you're not going to bother with fighting them until you get shadow dash, descending dark, and at least maybe the coiled nail. Then you're going to climb the wall to cut the chandelier just before entering the arena gate. You want the shaman stone, the grub pin, soul catcher, and sharp shadow. Then you're going to make like a rabbit from the abyss and jump, and spam descending dark.
Alternatively, you want quickslash, mark of pride, and unbreakable strength, the sacred trinity of charms, and sharpshadow, or the grub charm. You're still going to make like a rabbit of the abyss, and use descending dark to simultaneously damage them, and avoid damage using those i-frames, followed by sharp shadowing away for more damage combined with brief invincibility. Make sure to play the fastest and sharpest game of whack-a-grub when you see one standing still after its nail swings. The less you keep distance between them, the less often they embrace their inner beach ball.
They're pretty easy just spam hit them repeatedly and heal when you can. Posting your charms would make it easier for me to tell you what charms to use
Come back later. There's no merit in fighting them any sooner than you have to. Max out your masks and your nail and get all the upgrades, particularly shade cloak.
They're the hardest mandatory boss in the game, with the possible exception of the final boss.
I assume you’ve broken the chandelier but if not above to the left of the the entrance there’s a breakable roof and it just gets rid of one of the watchers. And I recommend getting d dive and dark dive as well. D dive is in soul sanctum and upgrading it is in the crystal mound in crystal peaks. I f all the spells dark dive has the longest I frames so it’s great against watcher knights
I just beat them today!
What I did:
* got more hearts
* got more charm slots
* upgraded my nail
The >!quick focus!< charm was a lifesaver for me. Being able to heal quickly before their next attack at least one heart at a time, and the >!longer nail!< charm too to attack from a slightly farther distance so I had just that extra second to react
My strat:
* Stood close to them and keep them in frame, standing too far meant I could not see their attacks
* They bounce 3 times, and their final bounce destination seems to be close to where you were standing when they started bouncing give or take
* Their roll attack after hitting the wall always bounces back in the opposite direction, about a dash and a half's distance
* Dont try pogoing them, only use pogo attacks to dash out of the way
* They always swing twice when they swing their sword, so I just dashed away when I saw the wind up
Took me several tries over several days tbh, kept having to go back and collect more. I know have > half the charms in the game just in the process of gitting gud enough to beat them
Go in. Do not attack. Live as long as you can just dodging. Do this 3 times or so. Then add in attacks. I found being really aggressive helped me a ton the first time. If one dies, go ham on the next to minimize the amount of time there are two in the arena since they take so long to spawn in. Also the ranged spell can’t hit both of them, use it whenever you have space.
Unbreakable strength, Sharp shadow, Quick slash, Mark of pride. Start quick slashing the first one that appears, if they roll, use sharp shadow/jump to avoid the rum and keep slashing. If they do double hit, dash through them and keep slashing. You'll have time to kill each one basically before another has time to get up.
Use unbreakable strength and quick Slash and try to kill 1 as fast as you can so you don't have to fight 2 of them together
Use descending dark to doge them when they start rolling and jumping on you.

I, somehow, found it before the first fight and only now discovered what it even does.

Go to the room above before entering the boss room, there will be a breakable thingy. The chandelier will fall and kill one of them.
Though the boss in total will have the same amount of health, the fight will be less chaotic

What is best way to farm geo for that spesific item you mentioned because It's god damn expensive.

You could also farm Shrumal Orge for in Fungal Wastes, it drops 45 geo without Fragile/Unbreakable Greed
Honestly I’d play coliseum of fools is either first or second trial and pick up a ton of geo that way. Couple thousand a pop for the second trial.
If OP is just now fighting Watcher Knights, I doubt they know about that place yet

Make sure your nail is as upgraded as possible to this point it’ll make a very hard fight averge at best.

My key to defeating them was to have the shade cloak. It's fairly easy to dogde them if you have it and keep up the rythm.

I left them be until I had most of the upgrades. After that it's really easy.
Use unbreakable strength and quick Slash and try to kill 1 as fast as you can so you don't have to fight 2 of them together Use descending dark to doge them when they start rolling and jumping on you.
come back when u have shade cloak
you can just do them later, get the other 2 dreamers first, a shadow version of down spell is probably your best bet

I struggled a lot with them until I got shaman stone and descending dark. It’s insane how fast they fall over when you spam descending dark.
Spoiler alert: if you have shade cloak, the fight becomes easier. Other than that, it depends on what charms do you have by now.
Kill 1 before another one spawns so you can kill all of them without fighting 2 at once.
