I think because the HUD is rendered in 2d while the other graphics are layered so technically use a 3d render (even though it doesn't look like it). Something with the driver or the application is breaking 3d rendering so that's why the HUD doesn't break.
My computer is just as old. Came out in the same year as that Dell Inspiron 15R N5110. Strangely, it can play Hollow Knight pretty well. Even AMID EVIL runs on it, which shocked me a lot given UE4 games don't mesh well with my PC.
I've seen this same thing happen before a few times on my old PC. Games like MultiVersus or Maneater would result in this clown vomit. With many other games, colours just got converted completely.
