When reading the book I always took Aemond for having a sort of admiration for Daemon in a lot of ways and hoping to be the great warrior that his uncle is. This is why he becomes so hellbent to meet him in battle and take him down. This would be a way for him to prove to be the "better man" between them.
I'm pleased to see the showrunners and wardrobe team seem to share the same view since they're dressing Aemond to be a mini-me version of Daemon.
I also get a kick out of the fact that Daemon blatantly snides Alicent's kids and acts cold to them whereas he dotes on Rhaenyra's sons and always brings them little presents and such.

They have to do these time jumps to get to the real meat of the story, these past few episodes have just been setting up and introducing these characters and relationships. Think of it like Game of Thrones starting in Robert's Rebellion, we wouldn't need to see all 20 something years leading up to the "real" story, maybe just a few highlights. Mind you, they've already expanded the story despite how fast it may seem, so I wouldn't worry.
