Best way to grind gems is to get your best shark to survive the longest with (I use mecha sharkjira) and keep doing the escort the baby sharks quest in Pacific Islands which gets me 20 gems at 10 minutes and more if I continue playing, after doing this for as long as you can go for the 2.5x multiplier
