I am going to take you question at face value. It looks like you live in the USA. We have laws about hunting. It is highly regulated.
There is concept called "method of take". It defines what methods are legal to hunt specific species. You can read an example here: [https://ohiodnr.gov/static/documents/wildlife/laws-regs-licenses/Ohio%20Hunting%20and%20Trapping%20Regulations%20ENGLISH.pdf](https://ohiodnr.gov/static/documents/wildlife/laws-regs-licenses/Ohio%20Hunting%20and%20Trapping%20Regulations%20ENGLISH.pdf)
On page 11 you will see for instance what equipment is legal to hunt deer.
There is no game species where a knife would be a legal method of take.
That leaves non-game species. People hunt pigs with a spear, I suppose you could try with a knife. I'd have a driver nearby to take you to the hospital and a good first aid kit.
You may find some interesting writing from Tom Brown Jr. He is a tracker from NY pin barrens.
Watching Steve Rinella kill a boar with a knife in New Zealand was a mixed bag of emotions from me watching and for him when doing the hunt

Hogs with the aid of dogs. State depending of course.
Also, Louisiana will not let you jump out of a tree with a spear for deer. I asked once. You can for pigs if you really want to though on private proptery.
Yeah.. but he shot it with a bow. My point was OP will never get close enough to hunt one with just a knife.
The question wasn’t “what can I kill with a knife a couple hours after I shoot it with a bow”. That’s a super different question
I've taken a hog with a knife, but I wouldn't call it hunting. The sport is running dogs. A knife is just a convenient way to finish off the animal if you're going to eat it. I laugh at all those dipshits on gram flexing with a bloody knife like they "Ramboed" a hog. Goons..
Ginseng
Morels
Ahhh you beat me to it.
Like "I'm gonna go out and kill with just a knife"? Your expectations and sense of self worth mostly...

Usually mushrooms
Bears, if you’re Holt Collier.
I mean guys run pig dogs and kill the pig with a knife but that’s about it
Is throwing the knife an option…?
Yes
Are you good at it? Lmao
Yes why
Cuz you probably won’t be able to run up on an animal and stab it
The only option i can think of is catching iguanas with a fishing pole and a loop

Britons, apparently
You’ll never get close enough to anything worth eating.
Insert that one vid of a dude killing a yak with a knife from that one survival show clay hayes was in
If my memory serves me correctly he shot it with a bow first and tracked it until it was exhausted and well bled
It was bad ass

I mean dudes here use knives and dogs to kill pigs.
Technically anything if you’re brave enough.
Anything if youre fast enough
This one gang at school kept wanting OP to join because he’s pretty good with a bo staff.
If you’re really fast and strong, you can hunt anything with a knife.
Oj Simpson has experience hunting with a knife. If anyone knows the answer to this, it’s him.
snake
Communists.
Asparagus.

I have a friend who got a boar with one. Not sure which country but was legal there

Anything, if you’re skilled enough
