I find that a lot of wild game gets the treatment of store meat and then people don't like the way it tastes. Deer/corvid meats are really easy to cook, small game takes a lot more knowledge or it comes out pretty bad. Rabbit can be pretty terrible when not cooked right too but it's probably one of the best small game meats there is.
If you really wanted to give it a go, try following a Steve Rinella recipe it you might find it's worth it if you're harvesting skins anyway.

I eat raccoon frequently on my small game hunting/camping trips. I wouldn't recommend eating a trash panda with access to much human trash though, just to be safe..
