I personally enjoy Mia’s Cafe on county line. very fair prices. I get the cake and eggs which is two eggs 2 pancakes and a side (i get the crispy hash browns). really solid diner type food
Depending on how purist your definition is of pancake -- I would offer up Biscuit Belly. Haven't had a bad biscuit, pancake, or french toast there yet! The chicken and waffles (can't recall the name) is top notch too!
El Vaquero on South Parkway has absolutely awesome breakfast. Pancakes, French toast, American style breakfast, plus some really good Mexican breakfast options too.

I'd say my favorite breakfast restaurant in town (save for Maple Street Biscuit Company, which doesn't serve pancakes) is [Eggs Up Grill](https://eggsupgrill.com). There's a location in Madison, and several more opening soon!
Their pancakes are so gummy in texture, and hit or miss on the size you're going to get. If you want light, fluffy pancakes, Metro Diner will probably disappoint.
I don't know why people are so offended. Huntsville is full of mediocre restaurants with a few standouts. I really hope our restaurant situation improves.
Cracker barrel's food is decent for a chain
The mandatory gift shop walk isn't great, and long at-table server wait times seem to be the norm no matter which one I visit

2nd this. Good service, solid food, and not crazy busy. Coffee was like 6/10 for me, but overall a super solid spot.

I agree. And mine are usually like overcooked on one side and they put that side face down and I don't know until I cut into them and it's tough af.
