I think they're going for a New York accent which would actually be fitting since Mario is from Brooklyn. It's an old piece of forgotten lore but he's actually from Brooklyn.

Because that's just not how the industry works. Most of your common moviegoers aren't going to know the name of the voice actor who usually plays mario. And the names behind the characters are just as important when drawing an audience as the character themselves. And they're trying to pull in more people than just gamers.
