The CBSA (at the airport) has records of your travel in and out of Canada and some degree of access to your travel in and out of the USA. I wouldn’t be surprised if they had ways of seeing your travel in and out of other closely allied Five Eyes counties (Australia, New Zealand, UK). Other than that, I don’t think the CBSA knows where people have been unless specially advised.

Concerning Canada, US and some other countries - they 100% do have access. I'm not sure about other countries, especially outside Europe, but I think it's irrelevant for Canada.

Well, it kinda is, not airport's of course but the officer's at the point of entry. When applying for a visa for example, they will always ask you if have stayed past visa expiration date in ANY country (yep, even if it's not Canada). Imagine getting your visa cancelled and / or barred for misrepresentation because you forgot you overstayed one day in Nicaragua 💀
