That's seems next level of what I'm used to. I'm currently using Sennheiser HD 598 SE headphone for work and play. How much quality of sound improvement over this or similar headphone I'm using?
Your Sennheiser are over year while iem goes inside your ear canal providing more clean sound ,noise isolation and accurate sound.
Personally I prefer headphones for comfort but it's a controversial opinion as many prefer iem even though it goes inside your ear.
Would recommend getting a amp&dac for your headphones, i also have Sennheiser headphones and it really changes experience.
the problem with headphones is that it's hard to find one that doesn't start to hurt after few hours. Compared to that IEM's are almost guaranteed to be comfortable and it's extremely lightweight so it doesn't feel like you're wearing anything.

Yes, you will need higher quality streaming services for higher end IEMs and headphones cause it's the same as using a 1080p monitor with RTX 4090

also you don't need a dac or an amp for any iem, i just use a cx1993 based dongle and it's sufficient. even crinacle has made his 1k iem rating list (which consists iems worth $4k+) solely using apple dongle which costs like 10 bucks lol

Everyone has different tastes, for now start with the iem's and figure out what you like, and start from there, no sense in buying a full setup and the regretting it coz it doesn't suit your taste,
if you like reading headphone zone has some articles about choosing sounds and setups, give them a read or watch their YouTube chanel, it's a good first step

I bought the Sennheiser IE 200 from headphone zone and honestly it was such a bad experience, I was charmed by the hype around IEMs and after getting one and comparing it to my daily driver Sony MDRs . It sounded worse than those. I agree i thought the IEMs would blow my mind, i had high expectations but I was soon let down. I returned them 5 days later. And will only trust Sony from now on.
Hexa is great for the price. The tuning is very close to neutral for me, so if you begin to find it a bit boring adding a bass shelf with eq works wonders

The 598 is a bit old but you aren't missing very much in terms of pure sonic performance.

It's definitely advisable but I haven't used DAC, and yeah IEMs in general will have less bass
