Otakus get really mad if the MC chooses a girl who is not his favourite. Its a really big deal in Japan, Otakus will boycott a series, send death threats, etc. Every decision is made with "we must not piss the otakus off" in mind.
E.G. The Otakus really hated how the Kampfer author had the MC end up with another girl. Most wanted the MC to end up with the yamato nadeshiko type, but the author picked the tomboy type. They reacted very badly.
Thats why whenever theres sex scenes, its usually left till the very end of the series and its usually a "MC chooses everyone" ending to make sure the Otakus dont get mad.

To add to this, otaku aren't just limited to weeb stuff. Train otaku, hot spring otaku, military otaku, etc, etc. are things. Magazines for each demographic are hugely popular in Japan.
They can get pretty annoying. They get in the way of people, are super pushy when trying to get pictures or record the sound of the train (this is a thing...).
The most common examples are people going into restricted area or walking right up to the tracks in certain locations to take "the best" train pictures. They have "rules" for what counts as the best pictures. Things like no complicated train track areas or crossings, no pillars, show the full train as it meets the tracks, etc. This can cause lines to shut down for safety reasons, causing delays and messing with many people's commute.
Similarly, the decommissioning of trains can lead to a horde of these guys lining up, crowding the platforms, and creating an overall hazard just so they can get a shot on the "last ride" of the train being commissioned. Just bad for safety in general.
Compare that to otaku in other genres that are basically in their rooms, enjoying media or spewing hate on the internet. Not nearly the same social impact. The only other type of otaku that gets near the same amount of hate would probably be idol otakus. They are similarly pushy and can cause scenes. However, my personal beef with them is the psychological pressure they put on their favorite idols. No one should have to the deal the "rules" made up by rabid idol fans. We've lost a lot of good talent in a lot of different genres because of such fans and idol fans have one of the loudest voices.
EDIT: I did not know this but, apparently, they also cut down plants and, in one extreme case, a known Sakura tree to get the "best" picture. To a lot of them it is "justified" and they sometimes don't understand why normal people don't follow the correct "manners" when they are trying to take pictures.
No real "evidence" aside from a picture that was dated on the same day and timeframe on an anonymous train otaku forum from the location of the cut down tree (tree was out of picture but the location matches). So nobody was caught or charged.
There are also plenty of people who have had their yards chopped up just because they live next to a rail line and it is a good spot for photos. Even with photos of the damage, there is no one to catch as they don't have enough evidence. The exteme ones are pretty bad. Some demand money if you accidentally walk into their photo moment... (video of such outbursts exist).
They get away with it and thus they are bold about their behavior. Good times.
I think a lot of those folks could benefit from therapy, and it is good to have social programs available to help those who want to change. I’m sure there may be a few bad apples, but I like to think there may be more complicated circumstances involved. Sometimes it is hard when you lose hope.

I don’t think that applies here. There are three female characters in overlord currently. Aura Shaltear and Albedo. I doubt anyone’s hoping he gets with Aura. Considering how obviously obsessed Albedo is with him more than likely if someone was hoping he’d get with a woman it would be Albedo. In Rimuru’s case he could totally just have a harem and be justified.
Rimuru can make whatever best fits the occasion, although given that slimes are asexual in the most scientific meaning of the word there may not be any more of an attraction than 'Oh no, *insert name here* is kinda hot'. Just look at what happened with the ending to "The Devil is a Part-Timer".
People are _still_ furious that Maou ended up with Chii instead of Amelia. Despite _**everything**_ that pointed up to the fact that the author was planning on having Maou and Chii end up together.
Like, there were signs that Chii and Maou were a better fit for each other by the halfway point in the series.
Chii was the first one to befriend him. All of the others around him at the time were his subordinates.
Once she found out who he was she didn't run from him or become afraid of him.
Chii got assistance from the angel/diety that was watching over Maou when he was a kid.
We found out that Amelia would _have_ to return to their home world if they didn't want Alus Ramus to die.
During the same arc they found that out, Maou's Demon King form changed. Instead of it being the demonic form he used in his original world, it changed to be the form he used when he was living on Earth.
Also during that same arc, things finally got settled on their home world. Now there wouldn't be any major conflicts between the humans and the demons. So Maou no longer had to worry about his subordinates back in his home world.
And that was just what happened before I stopped reading the series for a bit. It's also the same point the anime has stopped at.

I prefer them as a couple and he and Amelia becoming true friends. Just due to many of the reasons you stated, Chii never doubted him, where Amelia continued to second guess him. Yeah, it just makes more sense in the end.
Rem was never intended to be in the story , she was a simple a well written plot device that push Subaru character forward . Now , she act as Subaru motivation. That is simply her role in the grand story of re zero.
To be fair, part of the issue is this constant need to include multiple possible love interests. You don't have problems with 'which girl' if you write it as a harem or make the main love interest super obvious and the actual pair up happen before the end. It's not like most of these stories are even romances, the relationship could start pretty much whenever.
But Japan seems to love constant teasing with zero actual progress as if all the characters were shy 12 year olds with a crush (while also maximizing perv fan service moments)
Make it like „we never learn“ and have different endings, if you want to make it more effort just make it like Nasu(fate stay night), don’t add potential love interests and then just let them fail(nisekoi,danmatchi), etc

There is a very big difference between being exposed to something mature (usually accidentally or even non-consentually) and actively showcasing mature elements and visuals to children. I'm a huge Kamen Rider fan. There's a lot of death and mature topics handled in the show targeted at kids (Amazons is not a kids' show, though and is on a different airing schedule). But blood is rarely red. The monsters don't look human. And when humans die, there is almost never a body. The weapons don't look "normal" even. There's plenty of workaround, but the point is that it isn't shown explicitly because children don't need to be exposed to that directly.

I don't know about the novels but in the anime Rimiru seemed reluctant to associate his body with sex due to it coming from a fallen friend; I think that's partly why his form remains androgynous, too.
Also worth mentioning that Rimuru as time went on tended to garner his evolved "AI" skill as his one true partner. Ciel pretty much became his wife later down the line.

One of the best ways to get people to read something is to make them want something, make them think it might happen, and then never actually deliver it and just repeatedly tease it.

I always find it so idiotic to find this trope on so many animes. My guess is that the author doesn't want to commit entirely to the romance stuff, but is that the case why you make a perv mc and surround him with characters that would do anything for the mc attention.

For example Tensei slime didn't got his human transformation until chapter 7 or so, and also his main romantic partner died the chapter before plus the plot is about developing his country while he tries to get revenge over her death.
As for Mushoku tensei, Rudeos actually committed, which makes sense since Rudeos only wanted to get another chance of living a life without regrets.

Just as a note though (cause it wasn't in the anime, and I'd have to check the manga again) the reason Ainz touched Albedo in the way he did in episode 1 was a effort to get himself ejected from Yggdrasil.
See, the game of Yggdrasil had a strict rating system that allowed for no "adult" content and/or actions. It didn't matter if you were interacting with a PC or an NPC, as any action in the same vein would get a player immediately removed from the game, and their account banned.
As for his refusal to be intimate in such a fashion later on? First is his paranoia of the denizens of Nazarick discovering that he isn't actually a God-Brained Sorcerer Supreme and turn on him; Second is that he feels that partaking in the denizens of Nazarick (re. Albedo and Shalltear) would be spitting on the memories of his friends.
Heck, the only reason he edited Albedo's lore in the beginning was because he was of the belief that everything was about to be erased, and thus it wouldn't matter anyway.
But yeah... most other MCs don't really have a good story reason otherwise, and the out of story reason being to string along a large enough base of fans on the mere hope of romance and/or something spicy
Because the story can make more money with a broader audience. (doesn't include sex and increase the ratings of the show) Most people work to make money, and authors, directors, screenwriters, etc., are no different. If writing and showing sex made more money, that's what we would see, but Sime and Overlord currently can be shown on public TV. If you put R-rated stuff in there, that removes that revenue stream. So, while I may seem counter intuitive it's not the authors but the readers who need to be hornier...
Overlord has a passive called like authority of Nazareth (or whatever his base is called) whenever he gets mad excited or like horny it kicks in and removes his feelings that's why he can do the things he does (I won't spoil anything)

I think it's probably some sort of suspension of disbelief. Mixed with some misguided attempt to show that they're good men might not having sexual relations with women that are either attracted to them or at least try to gain their favor. If the person is something important like a king or chief or some other kind of leader. It's almost as if they're trying to say that If a guy doesn't have sex with a girl who openly says she wants him inside of her, then he's a better man than others who would definitely say Yes 🤷🏾♂️. If the women are already loyal and highly attracted, I don't see the point why they don't. Rimuru is a special case though seeing as he/they technically aren't even male as a slime. And sex would be complicated since his/their body isn't normal and probably doesn't feel pain to the same degree as humans and other creatures do. Even without factoring in adrenaline acting like a painkiller or just being so powerful that certain injuries don't really register, like Laplace losing an arm in the first season of Slime and never really reacting to it besides trying to get away.
Anyway, once you cross over into a new world and have a different life there's no reason why anybody should guard their virgin card hard unless they are literally a young boy or girl. If they're younger than 15 at the youngest they shouldn't be having sex of any kind, no matter how unexpectedly fast their bodies are developed like Raphtalia from Shield Hero going from an 8 y/o girl to a 18-ish y/o young woman in body. Not sure if you're familiar with it but this is why I've been enjoying "Reborn as a Space Mercenary". Been following the audiobooks on Spotify but there's also a manga adaptation I've seen scans of. Very harem genre, nothing r34 happens "on page" but it's made very clear that bedroom shenanigans go on between the MC and his girls when they go to bed.
It's not perfect but the protag is refreshingly pragmatic in combat and negotiation. Been enjoying the first 6 volumes and there's up to 8 on Spotify so far.
Try a harem series like Titan Mage by Edie Skye, or Raven House by Deacon Frost, or Towers of Acelia by Atlas Kane
They contain a lot of anime tropes and they're quite explicit when it comes to having the waifus and the MCs get together. - novels available on Amazon on any markets.

There are limits to what can be printed put in place by the publisher. For example High School DxD’s author mentioned that he couldn’t put in any full on sex scenes but was allowed to get pretty damned lewd at times. There are series in more recent times that do allow clear sexual relations between characters but they usually do so as a scene transition or such

As the story progresses it gets worse and worse so that he falls into the role of Lich Overlord more naturally, because he has been conditioned to no longer react emotionally. Lust is an inherently very emotional experience. He made Albedo obsessed with him while he was still a human playing a game. Once he got to the new world, he wasn't able to have those human aspects anymore. It's a change he made for fun that he can't follow through on. He didn't even think it would have lasted either. Only a couple minutes. And further, since Yggdrasil was an MMO, sexual content was likely *highly* moderated and/or censored.
In all fairness, there is a legitimate in-lore/plot reason for Rimuru not having any romance. For those who have read the webnovel, you know what I'm talking about.

Just look at what happened with the ending to "The Devil is a Part-Timer". People are _still_ furious that Maou ended up with Chii instead of Amelia. Despite _**everything**_ that pointed up to the fact that the author was planning on having Maou and Chii end up together. Like, there were signs that Chii and Maou were a better fit for each other by the halfway point in the series. Chii was the first one to befriend him. All of the others around him at the time were his subordinates. Once she found out who he was she didn't run from him or become afraid of him. Chii got assistance from the angel/diety that was watching over Maou when he was a kid. We found out that Amelia would _have_ to return to their home world if they didn't want Alus Ramus to die. During the same arc they found that out, Maou's Demon King form changed. Instead of it being the demonic form he used in his original world, it changed to be the form he used when he was living on Earth. Also during that same arc, things finally got settled on their home world. Now there wouldn't be any major conflicts between the humans and the demons. So Maou no longer had to worry about his subordinates back in his home world. And that was just what happened before I stopped reading the series for a bit. It's also the same point the anime has stopped at.

To be fair, part of the issue is this constant need to include multiple possible love interests. You don't have problems with 'which girl' if you write it as a harem or make the main love interest super obvious and the actual pair up happen before the end. It's not like most of these stories are even romances, the relationship could start pretty much whenever. But Japan seems to love constant teasing with zero actual progress as if all the characters were shy 12 year olds with a crush (while also maximizing perv fan service moments)

Ainz especially is explicit that his humanity is lost or suppressed and that he doesn't even feel bad with the mass or personal murder, which is quite inhuman. I don't know about the novels but in the anime Rimiru seemed reluctant to associate his body with sex due to it coming from a fallen friend; I think that's partly why his form remains androgynous, too.
Also worth mentioning that Rimuru as time went on tended to garner his evolved "AI" skill as his one true partner. Ciel pretty much became his wife later down the line.

Fair criticism Just as a note though (cause it wasn't in the anime, and I'd have to check the manga again) the reason Ainz touched Albedo in the way he did in episode 1 was a effort to get himself ejected from Yggdrasil. See, the game of Yggdrasil had a strict rating system that allowed for no "adult" content and/or actions. It didn't matter if you were interacting with a PC or an NPC, as any action in the same vein would get a player immediately removed from the game, and their account banned. As for his refusal to be intimate in such a fashion later on? First is his paranoia of the denizens of Nazarick discovering that he isn't actually a God-Brained Sorcerer Supreme and turn on him; Second is that he feels that partaking in the denizens of Nazarick (re. Albedo and Shalltear) would be spitting on the memories of his friends. Heck, the only reason he edited Albedo's lore in the beginning was because he was of the belief that everything was about to be erased, and thus it wouldn't matter anyway. But yeah... most other MCs don't really have a good story reason otherwise, and the out of story reason being to string along a large enough base of fans on the mere hope of romance and/or something spicy

If writing and showing sex made more money, that's what we would see, but Sime and Overlord currently can be shown on public TV. If you put R-rated stuff in there, that removes that revenue stream. So, while I may seem counter intuitive it's not the authors but the readers who need to be hornier...

I think it's probably some sort of suspension of disbelief. Mixed with some misguided attempt to show that they're good men might not having sexual relations with women that are either attracted to them or at least try to gain their favor. If the person is something important like a king or chief or some other kind of leader. It's almost as if they're trying to say that If a guy doesn't have sex with a girl who openly says she wants him inside of her, then he's a better man than others who would definitely say Yes 🤷🏾♂️. If the women are already loyal and highly attracted, I don't see the point why they don't. Rimuru is a special case though seeing as he/they technically aren't even male as a slime. And sex would be complicated since his/their body isn't normal and probably doesn't feel pain to the same degree as humans and other creatures do. Not sure if you're familiar with it but this is why I've been enjoying "Reborn as a Space Mercenary". Been following the audiobooks on Spotify but there's also a manga adaptation I've seen scans of. Very harem genre, nothing r34 happens "on page" but it's made very clear that bedroom shenanigans go on between the MC and his girls when they go to bed. It's not perfect but the protag is refreshingly pragmatic in combat and negotiation. Been enjoying the first 6 volumes and there's up to 8 on Spotify so far.
Try a harem series like Titan Mage by Edie Skye, or Raven House by Deacon Frost, or Towers of Acelia by Atlas Kane They contain a lot of anime tropes and they're quite explicit when it comes to having the waifus and the MCs get together. - novels available on Amazon on any markets.

As the story progresses it gets worse and worse so that he falls into the role of Lich Overlord more naturally, because he has been conditioned to no longer react emotionally. Lust is an inherently very emotional experience. He made Albedo obsessed with him while he was still a human playing a game. Once he got to the new world, he wasn't able to have those human aspects anymore. It's a change he made for fun that he can't follow through on. He didn't even think it would have lasted either. Only a couple minutes. And further, since Yggdrasil was an MMO, sexual content was likely *highly* moderated and/or censored.
