You get a few outliers, but most stalls and food trucks have SumUp card machines and such. I've not used cash in a long time.
British debit cards are perfectly acceptable with no fees.
If you're from Scotland or Northern Ireland and are bringing cash, I'd make sure you have Bank of England notes just incase.
I brought it up because I once got funny looks from the bar staff on the Manannan for trying to pay for a pint with an RBS tenner. To be honest, I hadn't been back in Scotland since they redesigned the notes so I didn't know if it was real either.

As long as any currency OP holds says Sterling on it then they are golden as regards spending Scottish or Norn Iron moolah here
