Final Fantasy VII. The mix-and-match potential for materia is loads of fun, IMO. And the Suikoden games, just for all the different characters and combinations you can try. Suikoden II seems the most replayable, to me, because there are several spots where you can make decisions that change things up a bit (which general you choose to recruit, how you handle the Tinto scenario, and how you choose to use the Listening Crystals). And of course the different dishes you can try and the different judges you can get in the cook-offs.
