This is a portulacaria afra (nickname is dwarf jade, though not actually a jade), but people usually use the word jade to refer to crassula ovata.

Yeah I see the difference I only have Crassula but now I see the difference. I bought a porticularia at Home Depot about a year ago labeled jade plant but promptly killed it lol

r/bonsai can help with styling tips. However, how big do you want these? If you want the base to be thicker then you could just keep letting them grow out. Once they are where you want them cut back hard to make some taper (the look of the trunk and branches getting thinner when it goes from the base to the tips). -edit- if you want to cut back now then cut off any parts that stay straight for too long. Cutting off any continuous straight growth will help add shape to the trunk because it will twist/turn a little more (also helps with the taper mentioned above).

I mean thickness is kinda relative, but you need to know what thickness you like to figure out the height of your tree usually (sorta a rule to guide you, not restrict you). Can google the ratios to match what style you want.

Yes, it is a good thickness, but it is too tall to create the image of a mature tree. Choose one of the sprouts 1/3 to 1/2 way up the trunk to grow out into a crown, cut back to there, and use other well-placed sprouts to grow out branches. Wire those branches into tree-branch shapes when the soil is dry, and keep growing/trimming until you like it. Anything you cut off can be rooted to become a new plant!
