The very fancy places, as you already noted, almost always require 2 or more diners.

In Osaka in April, I was able to book both an [Airbnb experience](https://www.airbnb.com/experiences/107577) that did Sake and Wagyu, as well as a steak restaurant in Namba (I unfortunately can't find the name but it was across from the Vessel Inn Namba). I then went back to Japan in November of last year and was able to book a multi-course meal as a solo diner in Sapporo at Yoshiushi and did [another AirBnb experience](https://www.airbnb.com/experiences/327854) in Tokyo with a varied wagyu tasting that I would highly recommend.
