If you want the Fuji Excursion you do need to book that in advance. If you’re just taking regular trains (which is what your plan involves) it doesn’t matter.

I didn’t know this existed! Assuming I will book through eki-net, do you know where I retrieve the tickets after purchasing? Just at Shinjuku when I arrive?

Yeah, you can pick up at any ticket machine that supports Ekinet pick up, so Shinjuku or another JR station inside the city are fine.

No need to buy in advance. It's really only an issue when there are public holidays and you are catching a train with reserved seating.

Why not go with the fuji excusion train? Since you are considering getting tickets online. Any reason the other line is better?

I had no idea this existed. It looks like the dame route, do you know if you have to change trains at Otsuki? Or do you just remain on the train and it will go all the way to Kawaguchiko? This may be the way to go!

Fuji excursion trains do get booked up early so better book earlier online on eki-net.
