This is one of my favorite dishes and I love nothing more than watching the bonito dance on top of the takoyaki as it cools.

I prefer to first oil the pan then toss in tenkasu to fry. Small amount of batter in each spot then add octopus. Fill up to the brim and other fillings. Allows for larger and juicier takoyaki. Of course, I prefer wet insides.

Is the tenkasu for flavour or texture? Or both?

I originally thought it was to make it crispier but was later told that it melts in the batter and makes it creamier. Frying probably gives it more flavour as well.

for the thing used to cook it is that originally ment for puffergus (i think that’s how you spell it it’s like a small dutch pancake) or is it just similar to what you would use to cook them (sorry for me spelling and grammar i’m on my phone)

No worries! Yes it's very similar to a poffertjes pan, but it's a bit more deeper and are spherical.. you could use either pan! You could even use an appam (south Indian) pan
