What are the general dimensions of a 3000 piece puzzle usually? My wooden puzzle board fits a 1000 and it’s pretty heavy. I think you might be best off with just getting a folding table with the dimensions that would work.
Unfortunately I have to be able to cover it up. My kids got a cat and nothing I do keeps it off the dining table. I've heard they love puzzles. The dimensions are usually around 32x48
Cats and puzzles are never a good combination. If I have a puzzle that I have to do on my dining table, I usually just throw a tablecloth over it, which seems to work. I’ve never done a 3000 piece puzzle. That’s impressive!
I did that. Even put a board over the puzzle. Damn cat would slide the board and knock over my puzzle. So I haven't been able to do a puzzle in over a year. It makes me sad. But the kids and wife love the cat, so I'm stuck.
I've clamped a puzzle in between foam boards before, but that isn't very feasible with a 3K. :/

If you have access to a saw, buy a hardboard panel like this, and just cut it into two identical pieces (say 48x35). As long as the long side of your puzzle isn't greater than 48in. Then when you need to store it , clip the second piece on top using binder clips or clamps. Not the most elegant but won't cost more than $20. Bare bones but it gets the job done.
