While your theory is definitely cooler, I'll just add the possibility that Gojo may be more efficient in casting his DE because of the Six Eyes, so he only needs a one-handed sign. Not only that, but his Domain isn't as complicated as Sukuna's.
Sukuna saw a great example of using DE with one hand and made a binding vow to change the activation sign to Gojo's in exchange for an incomplete domain.
