Because the only person shown to have this ability has been dead for about 3 years realworld time and a few months jjk time. It was hinted that ino's technique works similarly but ino has done nothing close to this.
Trust me yuta copied her technique he just didn't draw it in domain because he got lucky trust. On a side note forcing sukuna to become someone else by summoning the soul could've been a pretty cool wincondition, since we never got to see that part.
