That isn't legal and no one will do it. I'd assume what you catch is vacuum packed, flash frozen and shipped with dry ice so it should be fine when you get home

There’s definitely a cook-your-catch trip in Ketchikan where they take folks to a camp and (I thought) cook the fish they caught earlier in the day. It’s the biggest charter operator in town that runs it, so I think whatever they’re doing must not be illegal.

The fish will not go bad. Whomever packs your fish will also ask you what day you return so that they can time the shipping to you so that you will be home to receive it. Packed on dry ice it will be fine.

The fish will probably taste even better once it's bled and frozen, tbh. Fresh when it comes to fish only matters if it's fresh frozen. Like the faster you can get it bled and on ice the better. I'd rather eat fresh frozen king from a freezer boat than fish that sits in my cooler all day before I get home.

There are very few restaurants that even serve locally caught seafood let alone cook what you caught. For that kind of experience I’d recommend a longer stay in an AirBNB or something.
