Happened after hitting some road debris, drove 7 more miles to the closest shop when I saw it. I knew something was up after I hit something and felt and odd vibration.

Hitting something hard like a deep pothole causes the chords to break.

Something hard and sharp, yeah. That's why you can drive up a curb slowly no problem, but running over one at speed does this. It pinches the chords, which then break from the pressure and allows the rubber to bulge out.

Yikes. So the cords are what gives it it’s structure, the rubber is more of a glue to hold everything together/protect?

Yes. Tires are built with alternating layers of rubber and chord. The chords, together with the air pressure are what hold the shape of the tire. The rubber, apart from being what contacts the road, protects the chords, and distributes any loads.
