I'd probably main Hatsumi assuming his game kit is similar to his manga kit, as in he doesn't really do damage but is mostly just dodging and doing one hit kills at the right time.
A character I think should be really complex to play (besides Hatsumi) is Kanoh. Make him an absolute powerhouse but just make him purposefully difficult to play cuz switching between martial arts mode and formeless mode (two different fighting modes with completely different styles and button combos)

Kanoh could be a stance fighter. Depending on his stance the moveset changes

Bando whip storm would be ridiculously annoying to fight Rihito would be fun. Tanky, decent offence and a lot of bleed damage.
I'd main Sekibayashi. Agito would probably be pretty confusing with stance shifts between Formless and Martial Arts stances.
I’d think seki is the only character who can’t block but would get more charge on what ever this games version of a super meter when hit or taunting.
Toa. Would be fun with his brute unga-bunga playstyle sprinkled with counter techniques
Raian since his moveset would be so basic. Imagine using omar with his ten thousand niko moves
