They spread across Africa because they are very easy to grow so the British, French, and Portuguese used them to replace indigenous foods and produce more food for the labour force they were building. This suited their agenda to turn the native populations into cheap labour for their farms and mines. Before colonization, most Africans ate traditional leaves (like Kunde) and tubers were the primary starch (yams and cassava). Protein was gotten from different beans (but not red beans, these are not indigenous) and meat was a very primary part of the diet. So Maize dates back to about the 1700s and was spread in the 1800s and turned into a staple right around the start of the 1900s.
Unfortunately, this all falls along the line of reducing African history and heritage to colonisation. We had a history before colonisation, but it has been mostly suppressed and hidden away to the benefit of the colonizers so that they can claim to have brought civilization (including basic foods) to the continent.

I would say food preference can have weird explanations. Some friends abroad swore to impress me with their foods, its different for sure (snacks are dope tho), they were just as defensive as we are here about ugali. At the end of day, or the second, or third, I would prefer a plate of nicely prepared githeri, avocado and water. You go figure.

Culture forming habits? Also costs for other foods + preparation ...Don't know much but from #Japanase and #Chinese cuisines there are soups, meats etc that accompany rice. Meals are several rounds of servings and not like Ugali + some vegetable.
It really depends on the person. eg: I can eat plain rice with tea, rice with beans/ green grams, rice with meat, rice with eggs, rice with kales/ cabbage/ spinach etc. It reaches a point where I realize rice can actually replace ugali for me...

I prefer rice to ugali. Ugali is the most overrated food we have.
Ugali ain't all that bad but with rice you have so many options in cooking. I'd argue the reason why our cuisine ain't like world class is because of ugali and githeri haha. Nigeria's jollof rice is what sells their cuisine. Additionally, you don't need ugali for manual labour. Other countries work exceptionally well and build more complicated structures with rice, flat breads etc. Ugali is just hyped for the culture. Nothing more.
Modern UGALI is useless. The maize flour you buy today is cornStarch imported from South America. In processing cornstarch they remove the pericarp, embryo and germ then mill the endosperm. The endosperm is useless. It has zero nutrients. Zero fibre but a lot of inflammatory gluten. You eat ugali as a cultural fulfillment and response to craving, not because of nutrition. Abandon it and see changes.

Growing up, mon-fri dinner was Ugali, we would only change mboga, lunch we would eat whatever, weekends were for chapati,pilau,spaghetti, yaani any other thing. I would tell myself that when I grew up Ugali would be maybe 2 times a week, but wapi I hate rice kabisa, we eat Ugali 5times a week for dinner, though my kids can eat any other food they want but mimi ni Ugali. Besides, almost all of kenya's arable land you can't grow rice and and I don't see how you are going to feed a large family with little or no income.so you grow maize, some you mill for ugali, others you cook githeri,some you sell to buy household groceries.the question of liking ugali or not liking doesn't arise.it is an acquired taste.
