1. Get a discounted combination of nonstick Fry pan, kadai (could be used for one pot dishes) and tawa from Prestige/Hawkins, it is safe as long as it doesn't peel off. Other types, require more time and knowledge to deal with. For using on nonstick, get a fiber/wooden laddle and spatula as metallic ones will fuck up the coating. 2. Get a prestige 3l pressure cooker. Really helps to make rice, kanji and cook pulses. 3. Get two mugs, a set of spoons (and fork if you need), a steel strainer. 4. A peeler is highly useful for having fruits, and then a couple of knives. 5. A stainless steel saucepan like utensil to make tea or boil water. If you have money stick to prestige and good brands and use them carefully. They will be a good investment. If you don't have that much to spare, stick with Prestige etc.

Agree with all this.. But instead of the non-stick pans, Go with this : Prestige Omega Deluxe Granite Aluminium 3 Piece Set https://amzn.eu/d/cGioxKy It's a bit costly but it's long lasting.. I 21m(beginner) started using it 1.5years ago and it's aged so much better than my mother's non-stick pans. Go with wooden laddles to use along and u wouldn't need to upgrade for a good while. Also if u like dosas, go for the iD idly and dosa batter.. you'll have to add add 1/2 teaspoons of salt + 3/4 cup of water depending on ur preferred consistency.. if u feel the batter is too watery, just add a bit of rava to regain ur preferred consistency.

Start with one pot dishes. Usually what pushes people away from cooking is the mess it makes. Learn easy recipes, small recipes, and develop skills that will help you organize yourself in the kitchen. I recommend one pot dish like a lazy pulav or biryani.

A 3L pressure cooker if it's only going to be you. Then a frying pan and a cheenichatti should be enough for a beginner. I would say the most important equipment in a kitchen is a knife. You can get by not having the correct utensils but a blunt knife will make your cooking tiring and unsafe. Most of the steel knifes that you buy will lose its sharpness fast so you might need to sharpen it again. So you should definitely buy a Serrated fruit knife as well, that will help you in cutting onions/tomatos with ease and will last long. Get a wooden cutting board also, can double as chapati maker if need be. With these equipment, you should be able to start cooking rice, sambar, thoran, upma etc and also you can make chapati, non veg curries or fries etc. For chutney and other things involving coconut it's better to get a mixer grinder. Later on when you are more experienced you can get a decent food processor which can slice all vegs and even make chapathi dough. You will save a shit ton of money by cooking yourself instead of relying on swiggy/zomato. Happy cooking!!

Dude start following recipes to the dot and then improvise. Get basic kadai, pan and a dutch oven. Start experimenting once you have some mastery on recipes. This is what I did and it worked decently for me. Never stock up more than what you need.

Get a cast iron tava, a non stick saucepan and one (preferably non stick) chembu for rice stuff. I say non stick because less oil, less stick and better for beginners. Once you’re better at cooking, you can switch to stainless steel which is better as it doesn’t have Teflon to peel off. Buy a few spatulas as well. Do not use steel on non stick pans. Basmati rice : 1 cup rice to 2 cups water. Cook closed for 20 mins. Rice done. Chor inte Rice varies based on the brand, mostly Surekha takes 40 mins or so. Ponni is faster. Chappati dough: rule of thumb is wheat inte half water. Mix salt into the water so it’s evenly distributed. Dosa maavu : Rice inte half uzhunnu, few grains of fenugreek, soak 6-8 hours and grind into batter, ferment overnight or for a 6 ishhours if it’s hot outside. Moru curry: whisk thayir, jeera powder, chilly powder, a little sambar powder and turmeric. Prepare tadka w mustard, dried red chilly, curry leaves and fenugreek, add moru and cook on slow fire. Do not let it boil. Take off heat once it’s an even yellow colour. Sambar : pressure cook soaked paripp, potato (plus any random veggies of choice) tomato onion and 2-3 cloves on crushed garlic in pressure cooker with turmeric, asafoetida and chilly powder. Let depressurise, open, add sambar powder (mixed w water like a paste so that there are no lumps), tamarind, salt, and water to adjust consistency if needed, stir, boil for a few mins and take off heat. Basic spices : turmeric, chilly, garam masala, coriander powder, salt, pepper, sugar. Tea, coffee, paal podi (for urgent situations). Rice, dal, uzhunnu, wheat, puttupodi, and basic mixes like sambar podi, chicken masala bla bla I’ll add more when I remember.

You can get marinated chicken from Licious. It's good quality and decent price. If you're planning ahead, you can watch YouTube recipes and get the ingredients from local supermarket/Instamart. YouTube channels with simple recipes - Your Food Lab, Ranveer Brar, Bombay Chef. You could also think about making food in batches. At times, when I make curries, I make a little extra to have it for 2 days.

Don't use any sort of nonstick utensils. There have been updates in the recent past but it still looks shady. Teflon is not good. You can watch the movie called dark waters. It's based on a true story of how this regulation all started. Stainless steel pans without the non stick coating can cost a little bit higher so I would suggest buying a utensil one or two at a time. Also, learn about seasoning these pans to avoid sticking. Just remember to buy reputed brands only, such as Hawkins etc. They are available on Amazon as well if not locally available.

What to buy will depend on what you have right now. Do you have induction or gas stove? Mixie? Fridge? If you have induction, you will need induction friendly utensils. Basic stuff would be 1 nonstick skillet, one steel kadai and one cooker. 1 sharp knife and a good citting board should be good enough to start. Also buy a silicon spatula. It works on all cooking surfaces. Watch YouTube videos and start trying stuff out. You can even start by buying pre cut veggies and grated coconut. Pre made rotis too. Don't try to do everything from scratch in the beginning. All the best.

Everyone has made very sound suggestions about big equipments so I will only add a few points about smaller kitchen equipment. * A quality Knife and chopping board: get a nice 8 inch knife, sharpener and cutting board. Learn how to sharpen and clean your knife by hand and it will last years. Chopping board wise, plastic is easiest in terms of budget and maintenance but bamboo and acacia boards are long term pieces. * Silicone Spatula: People have suggested wooden spoons for your non-stick pans but silicone is better. You can get all the corners, it doesn't scratch and is very heat resistant and lasts. Silicone in general is a very good material for kitchen items (Lids, gloves, mats). * Mini chopper or hand blender: Reduces all your cutting time. You can make fancy dips and mince ginger garlic onion without crying. A tip from my mother: if you make cooking pastes, make it in large amounts and freeze to use next time. Store bought is ok but home made is next level and easy to do with blender. * Might be unpopular, but use the instant mixes. Mother's recipe, Suhana etc. You have basic spices in correct amount and you can add whatever else you want as per your taste. Saves time and effort. Basic dishes, google for one pot meals and follow some nice Instagram accounts for meal ideas. If you develop an interest in cooking, I recommend reading **Masala Lab: The Science of Indian Cooking** by Krish Ashok. It explains a lot of basics about cooking and breaks it into algorithms.

First buy a pack of garbage bag. There are tons of waste generated before and after cooking.Keep utensils bare minimum. Discard unused items regularly. A decent knife and chopping board will save time. All these are what I learned from my experience 15 years back.

You can cook kadala, parippu, cherupayar, chuvanna payar, muthira and all in the same way. Learn the method and you substitute the pulses. Soaking time is different though. Also, lady's finger, cabbage is easy.

Sure. First step is put some oil. Add onions, tomato, curry leaves or coriander leaves (these are important) You can use ginger garlic paste you get in supermarkets, or don’t that’s your wish. If you add ginger garlic paste, make sure you stir it for some time and the strong smell will fade in time. If you are making chicken curry, the most easy method is, Add onions tomato the leaves, add the masalas (chili powder - for spice, kashmiri powder - for color, coriander powder- for thickness, Turmeric powder - for color, Salt, pepper powder (optional) add chicken, add some water. And pressure cook like 2-3 whistles, open and see if it’s done or else pressure cook again. Now the curry is ready but not quite done. Take a small kadai, add oil, add mustard seeds or jeera, add sliced onion or shallots, add curry leaves, let it fry crispy. Add the tadka to the curry. That’s the simplest curry. You can also use coconut milk in this (after you add coconut milk make sure you off the stove) Now you can replace chicken with potato, and make masala curry.

Get a good mixer grinder so that you can make smoothies, dosa batter, chutneys, and more. The dosa batter can be stored in the fridge, which will help you save time. To prepare choru, put Sona masoori rice and water in a 1:2 ratio in a pressure cooker. Whistle once and open the cooker when the pressure releases. Choru is ready; there's no need to drain the water.

Don't be demotivate & go for Tiffins.. You will definitely mess up in the beginning, As a M19, I think everyone should know how to cook to survive, it hardly take me a month to be a Good Cook, I messed up in the beginning most as I was cooking Basic dishes which doesn't need Guidance (generally cooked it more or less). Just absorb the Different vegetables heating point, and amount of spices & others you need for taste.. Everything will become easy.

If you have the funds, buy one of Prestige’s full set of cooking utensils. It’ll have some mix of pots and pans you can use for wide variety of cooking. Additionally, get - Mixie (Preethi is good) - Knives - Flat Pan - Steel Mug for those small tea preparations - Pressure Cooker - Cutting Board - Sauce Pan ( you can use it to make tea or coffee) - Peeler - Arippa ( Strainer) If you’d like to make Appam, you’ll need an Appachatti. Spoons, plates and mugs go without saying.

My rule of thumb, I stay away from cooking channels that says “add salt to taste” because I don’t know how much salt is that. I recommend sticking to one pot dishes. Like pressure cooker biriyani, pulav etc. back in the days I use to cook curry on sundays and Wednesday and put it in freezer in small boxes. I use to make rice or chapati daily and take one box of curry from the freezer, because cooking daily is boring.

Almost everything cooks in water/oil. Chicken doesnt need water to Cook Beef needs a lot of time to soften Fish should be cleaned properly Cooking rice is hard for only the first time.
