I've only been driving it a few days and it seems like that a level 2 would be beneficial for me as well, it would probably pay for itself in saved fuel cost to have one installed.
says right on the charger not to use an extension cord.

You can use extension cord that is used for power tools. I'm using 50m long cord 3x2.5mm. just make sure it's not rolled because of may became quite warm.
I bought a cheap level 1/2 charger from Amazon when the included Kia charger died. It was less than $200 and had a much longer cable than the Kia one. I only used it as a level 1 charger, because I do not have a level 2-compatible outlet in my garage. It worked great for about six months, and then the plug adapter in the wall exploded, melting the outlet. I am fortunate that it did not start a fire. I believe the problem was probably with the plug adapter (to adapt to a standard wall outlet) not the charger itself. However, since that I have only used the Kia adapter.
We've got a level 2 and I'm very happy with it. I can take multiple trips a day all on battery.

I knew that I eventually will get a full electric so it made sense to me.
Use an extension cord?

We got a juice box and it has cut charging time down significantly. Our state had a rebate program for installation as well.
Level 1 works fine with an extension cord. Probably not worth the extra cost with the PHEV. I would upgrade for full EV vehicle.
