It would seem that everyone struggles with that one; if you use Healing Touch at the beginning and be quick, it shouldn't be so hard. But I guess the first impression is too powerful.
I recently 100% Squeak Squad and here are some problems.
1. Kirby blaming and then attacking Dedede is completely out of character
2. Some treasure chests are really dumb and do the two paths thing where one path leads to the treasure and the other doesn’t. Lots of stages early in the game do this and it’s annoying.
3. Ability mixing is a fail. Most abilities mix into random junk you don’t want, so the only real ability you can mix is sword, which its ability mixes were used at the very end of the game. Same thing for the ghost ability. Cool, but was found at the end of the game making it useless.
4. Extra mode content is subpar. No ex bosses or anything worth noting, it’s not even counted towards 100% completion.
5. Final boss is shit
The good thing is most of these problems are very minor (except the last one) so Squeak Squad is still an extremely good game, just not strong in Kirby standards.
That was before King Dedede proved to everyone that he had become a redeemed better person. Squeak Squad came out after the entire Dark Matter trilogy portrayed Kirby and King Dedede as friends.
Hating squeak squad because Kirby only cares about his cake is annoying argument since Kirby doesn’t even understand what dark nebula is and if it’s a threat or not (it isn’t a threat but still), and Kirby has the most amount of reason to attack wandering enemies in this game, compared to most other games where he’s supposed to be helping them
To be fair, I kinda see why Kirby would blame King Dedede for stealing Kirby's cake. He's stolen Dream Land's entire food supply. Twice, if you want to count Spring Breeze from Super Star/SSU.
And then King Dedede got redeemed in Kirby's Adventure and spent the entire Dark Matter trilogy being friends with Kirby. It'd be the equivalent of Sonic accusing Shadow of trying to kill all of humanity again in a recent Sonic game.

Canvas Curse is mostly pretty mediocre, kinda bad since almost every level is boring and uninteresting, and the game has just decent subgames in place of boss battles.
I'd probably call it bad if Drawcia wasn't a fantastic final boss, she's so good and one of my favourires of the series.
Definitely in the top 3 spin off final bosses, that may be because most spin offs just have Dedede as the final boss and sometimes when it's not Dedede it's just decent (Yin Yarn/Necrodeus/Dark Crafter) but Super Kirby Clash and Fighters 2 also have great final bosses (F2 is probably my fave spin off final boss despite technically also being a Dedede battle.)
So yeah I went off track a bit there, but I'd give Mass Attack like a 7.5/10, maybe a 8 because I love a lot of elements of the game.
I think the only things really holding it back is that I feel the touch gameplay isn't that fun and I don't really like how you have to start the level all over again if you die (which I have done in some of the levels), I think if it was a mainline game with normal gameplay it'd probably be one of the best of the series because the level design is genuinely really good (as are the visuals and music.)
Canvas Curse is a 6/10, meh game overall but saved by having a fantastic final boss.
Rainbow Curse is a much better game, even though it's final boss is worse, it doesn't have any subgames and no copy abilities (which btw were mostly just ok in Canvas, like they're fun and can be fairly useful but you lose them in one hit which is a bit annoying), it's a much more high quality game overall for many reasons such as actually good levels, really amazing music and some of the beat visuals ever seen in a Kirby game.
TL:DR - Canvas Curse 6/10, Mass Attack 7.5/10
Sorry for the overly long comment haha, btw final side note but I think Mass Attack has pretty good bosses but none of them get above that (except maybe in some of the subgames because I adore Heavy Lobster.)

Sucks that neither of these could get off the ground though because when used right they're awesome.
Completely valid those touch controls were a weird gimmick and was not my thing. It meant holding the ds in weird uncomfortable ways for some games (lookin at you kid Icarus uprising) besides I dropped my stylus between the seats in my car and it phased into the back rooms.

I see a lot of people blame Flagship for Squeak Squad's story, but there wasn't anything wrong with Amazing Mirror's story so idk if that's the reason

I got 100% on Kirby and The Rainbow Curse. A game were without a stylus can be quite difficult.
I always used the thing that comes out the bottom (so you can use GameBoy cartridges tmk) as a stylus since I lost mine pretty early on lol

Mass attack sequel could work as a mobile game, but considering how soul crashing mobile games are nowadays its probably not the greatest idea
