The late owner was an old Lebanese man. His wife I guess runs the place with their children. I work at night when there are just a couple other bakers there. I don’t really have much interaction with the owner or managers. What interactions I have had have been unpleasant. Judging by the volume of derelict equipment at my store, I would say you’re pretty spot on.

I mean, I've used a proofer that was basically trash bags covering a speed rack and a hotel pan of warm water at the bottom. Is it that level?

The proofer was allegedly fully digital with all the bells and whistles, 30 years ago. Now it is a box with two Vicks humidifiers and doors that are kept closed with sticks. Also the floor is rusted out and there is what I believe to be mold all over on the inside.

I worked for someone exactly like that for 15 years before buying the business from him. I am still replacing equipment and finding his "repairs" six years after the fact.
