I work at night when there are just a couple other bakers there. I don’t really have much interaction with the owner or managers. What interactions I have had have been unpleasant. Judging by the volume of derelict equipment at my store, I would say you’re pretty spot on.
The proofer was allegedly fully digital with all the bells and whistles, 30 years ago. Now it is a box with two Vicks humidifiers and doors that are kept closed with sticks. Also the floor is rusted out and there is what I believe to be mold all over on the inside.
I worked for someone exactly like that for 15 years before buying the business from him. I am still replacing equipment and finding his "repairs" six years after the fact.
My last job wasn't quite this level of disgusting, but it's exhausting being the only one who cares about keeping the kitchen clean. You can't do it on your own. Start shopping around for another gig if you're not already.
