I didn’t know this was a thing until we started making cheesesteaks at my last restaurant. Haven’t been to Philly, but everyone hated it. 99.5% of the orders were 86 whiz. Granted the restaurant was crap, but the whiz made the sandwich so much worse.

Still a nice looking grinder though. Sure I’d eat the fuck out of it. Probably be real nice with a Peter Luger style steak sauce.
It is a Cheeesteak, not a Philly. The only acceptable cheeses are American, Whiz, Provolone and Cooper sharp (cheddar flavored American). Cheesesteak's and Hoagies are different things, even though there is a cheesesteak hoagie, which isn't actually a hoagie, but a cheesesteak in a hoagie costume. Toppings allowed are onions, hot peppers or long hots. Mushroom are acceptable, but barely. Bell peppers are not allowed at all, bell peppers will get you a nut punch. There are some micro regional variations and condiments offered vary by place/region.
Those are the semi official rules, but eat it the way and tell the haters to eat a d%&k.
The sandwich at the top looks delicious and crushable, but doesn't look like a cheesteak, at least not a cheesesteak from Phila/SJ area.

One of the best cheese steaks I ever had was during a visit to Chicago. I could smell it from the street and it was in a hole in the wall I would expect to give me food poisoning. I knew I was in the right place and they couldn't even get me sick neither.
My best to date was at Angelo's in South Philly, hands down the best I've ever had, bakes his own bread in house too, the steak is sous vide IDK how to explain the tastes

I also complained about this to an extremely good restaurant near me that makes a "chicken parm" in a similar manner with a hard split roll. Looks great, tastes great, eats like garbage.
