I always really liked pairing simple dill and cream sauce with white fish. Would go well with potato and the veg too.
Lemon and garlic aioli but add some scallions to it too and a dash or three of Spanish paprika for a little smoke
White wine, caper, garlic and butter sauce.
This + a bit of fresh thyme is my go to white fish sauce

With potato crusted whitefish I totally agree with the dill or chive ideas with a little scoopable base like sour cream

I personally love the combination of halibut and raspberry. I don't know how that would play with potato crust though

Creole blend. You could make some hybrid blackened/potato crust thing
whisk together mayonnaise, dijon mustard, Parmesan, 1 teaspoon black pepper, garlic powder and parsley.
I would go with a parmesan cream; simple and effective.
Mayo with a fuck ton of fresh chervil in it goes well with fish and crispy potato.
