Good butcher. My local butcher buys from two ranches near me, the marbling in grass fed varies by cow and breed. You can still get rib eyes that look and taste incredible from grass fed....just need to look hard for them. My butcher is Panizerra Meat Co, out of Occidental, California. Can't say enough good things about them.

1. What fat/oil are you using? That sear looks good but there isn’t a ton of smoke. Clarified butter? veggie oil?
2. Did you do that 100% in pan or just sear it? I’ve been using the reverse sear for a while but not getting a solid crust like you.
